This is a recipe that I usually think of when I have a lot of leftover cooked vegetables and want to treat myself to some savory noodles. But let's be real. This is not a quick recipe unless you chop all these vegetables beforehand and freeze them or readily cooked veggies for whenever you want to stir fry something.

Ingredients
- 2 packs of udon
- 1/2 bell pepper
- 1 carrot
- 1/4 big cabbage
- 1 big firm tofu
- Corn starch (optional)
- Sauce
- Roasted sesame seed
- Soy sauce
- Mirin-style sweet sauce (mirin + sugar)
- Chili flakes
- Oyster sauce or (Mushroom oyster sauce if you want to keep this dish vegan)
Mise en place
- Prepare the vegetables: chop white onion, chopped red pepper, chopped carrots, chopped chinese cabbage.
- Finely chop garlic and white part of the onion and thinly slice ginger.
- Blanch the udon quickly in boiled water then wash it with cold water or put directly into an iced bath. After draining the udon, mix them with a bit of cooking oil or chili oil to keep them separate.
- Make the stir fry sauce: mirin sweet sauce, grated ginger, grated garlic, soy sauce, put in a pan and reduce with high heat
- Mince 1/2 of the Tofu and put everything on top of a kitchen towel to dry them before cooking.
- Cut the other half into small cubes and coat everything in cornstarch.

Instructions
1. Heat up some cooking oil in a pan, under high heat, fry the cubed tofu till they become golden, take out and put on some oil absorbing paper, set aside.
2. In a non-stick pan, under high heat, put in a bit of oil, quickly stir fry the tofu until all the liquid evaporates and the minced tofu becomes firm, add in 1 tbsp of the sauce then take out and set aside.
3. In the same pan, under high heat, put some cooking oil, stir fry white onion, cabbage, carrots, red pepper and season with some salt.
4. After the vegetables are 80% cooked, create hole in the middle of the pan, put in a bit of oil with the thinly sliced ginger, garlic, white head of onion and chillies flakes. When they become fragrant, stir fry everything together.
5. Sequently put the minced tofu and the cooked udon in the pan.
6. Put the sauce in and stir fry everything together.
7. Put the green onion in.
8. Garnish with fried tofu, roasted sesame seeds and katsuobushi if you have some.
